When the team at Tribble Creative Group asked us to help with their grand opening event at their new location we were all extremely excited for the challenge. The parameters for the event were simple, create innovative cuisine without the use of tables. Stations where food could be presented were forbidden at this event. Our firm adopted the idea of food carts with a fine dining twist.
“Savory Cones” Flavors included Beet “Sorbet” with Chevre Cream, Salmon Rillette with Fried Capers, Tuna Tartare with Sesame Brittle, and Foie Gras Mousse with Red Onion Gastrique. Chefs interacted with guests encouraging them to try “Double Scoops” creating unique flavor combinations. All selections were served in house~made Savory Cornets.
Artisan Tacos. Flavors included Braised Duck with Pickled Asian Slaw, Caramelized Honey, and Ginger Aioli; Shrimp Ceviche with Mango Relish and Micro Cilantro.
